Today is Cinco de Mayo and a great excuse to get some friends together for Mexican food and an icy margarita. Fortunately, since Phoenix is so close to the border, there are authentic Mexican restaurants every two minutes and other than lifting my fork, I don't have to do much in order to indulge in this cuisine of the heavens. Yet another reason to come visit the Valley of the Sun.
If you haven't planned anything for today's celebrations, this recipe from Stirrings for a mango margarita is the perfect last minute fix. I'm not a big fan of girly drinks, but these are a great blend of sweet and sour and one of my favorites to relax by the pool with. You can find Stirrings mixes at Cost Plus World Market, Target, AJ's Fine Foods, and other stores.
Make the margaritas prior to your friends' arrival and serve in individual frosted glasses or in a pitcher. Your friends will be impressed at your hip hostessing skills and they never have to know you didn't make the drinks from scratch. Don't worry, your secret is safe with us!
Mango Margaritas
1 1/2 parts of Mango Margarita Mixer from Stirrings
1 part tequila
In a cocktail shaker, combine 1 part tequila and 1 1/2 parts of Mango Margarita Mixer with plenty of ice. Cover and shake vigorously. Pour contents into a salted glass and garnish with a curled mango peel.
For a non-alcoholic version, substitute the Blood Orange Italian Soda from Archer Farms for the tequila for a tasty yet non-potent kick.
